Vodka Sauce

1 Medium onion chopped
3 cloves of garlic peeled and finely minced or use a garlic press
1 can crushed tomatoes (28 ounces) or for a more rustic sauce a can of Italian
plum tomatoes chopped by hand and the juices
1 tsp sugar
1 cup vodka
1 cup light cream
˝ tsp Crushed red pepper flakes
Pepper & salt
Olive oil

In a large deep sauté pan, coat the pan with olive oil and heat over medium heat. Add the chopped onion and garlic and sauté for 5 minutes until onions are translucent. Add the tomatoes (juice if chopped by hand), sugar, the crushed red pepper flakes, a generous sprinkle of black pepper and a dash of salt. Stir and bring to a boil. Let it boil rapidly for 10 to 15 minutes on a medium high heat, stirring occasionally so that the tomatoes reduce and thicken. Add the vodka, stir and reduce heat to medium or low. Cook for about 8 minutes. You do not want it to boil hard at this point. Reduce the heat to low. Slowly add the light cream, stirring as you add it. Cook for about 5 minutes or until sauce is hot.
